Real moonshine is about 80% vol. average -depands of which moment of destilaton process. At the begining it's almost pure alcohol and the last one is about 40% and it would choke you for a while if you don't know how to drink it.

firstly, it's cheese curd in poutine, not cheese. cheese curd squeaks when eaten, and poutine has cheese curd, necessarily. secondly and just as importantly, fries in poutine ought to be crispy, so the longer you leave your poutine in the hot gravy, the more soggy the fries will be. so eat poutine as soon as possible, trying to not let it sit too long, so as to not permit it to get soggy. the rest, is just creative toppings in a poutine, other that the original - fries cheese curd and gravy. enjoy

I was born and bred in England but I've lived in Canada for the last 20 years. When I first came here and everyone was telling me to try poutine, I just looked at it and shrug my shoulders and said, " it's just chips and gravy. We've been eating this for decades in England but we've never put cheese curds on it. That's what makes poutine a step up from gravy and chips. But I still think that chips are better to be smothered in gravy rather than fries.

Calling poutine "canadian" is like calling pizza "european". Poutine is québécois, and calling it canadian is heresy! I remember the 80s and 90s, when Canadians (english-speakers) made fun of the Québécois, calling them filthy "poutine-eaters". Then, somewhere around 2010 poutine became very popular abroad. Surprise, surprise, suddenly poutine became "canadian"... classic case of cultural appopriation!
